Specific features: Milk type: Pasteurized goat's milk. Aging: Semi-cured – aged for 30 to 60 days. Texture: Firm with good creaminess. Easy to cut and pleasant on the palate. Flavor: Mild yet flavorful, with fresh milky notes balanced by the smoky, sweet and slightly spicy touch of paprika. Aroma: Intense and enveloping, with predominant notes of fresh goat's milk enhanced by the spicy aroma of paprika. Color: Ivory white paste. Natural rind with a reddish-orange hue thanks to the paprika coating. Rind: Natural, coated with Pimentón de la Vera (not edible).
