These pigs, with 75% Iberian genetic purity, are raised freely in open fields, where they enjoy fresh air and wide natural spaces. Their diet—comprising natural feed, cereals, and roots—enhances the meat with unique flavors that can only be achieved in such a special and healthy environment.
The curing process, which extends over several months, allows the ham to develop an intense aroma with sweet and slightly salty notes.
