These pigs, with 50% Iberian breed, are raised freely in open fields where they enjoy fresh air and wide natural spaces. Their diet, based on natural feed, cereals, and roots, enriches the meat with unique flavors that can only be achieved in such a special and healthy environment.
Its curing process, which lasts several months, allows the shoulder to develop an intense aroma with sweet nuances.

RECOMMENDATIONS:
Cover the sliced area with the shoulder’s own fat or a clean cloth to prevent it from drying out.
Store in a cool, dry place, away from direct light and drafts, at a temperature between 15°C and 25°C.
Cut only what is needed for each serving, keeping the rest covered to preserve flavor and texture.
Rotate the shoulder when one area is finished to ensure an even cut on both sides.
