Our 50% Iberian Acorn-fed Shoulder stands out for its delicate fat marbling, giving it a marbled appearance, exceptional juiciness, and a smooth, refined texture. It comes from the finest Iberian pigs, acorn-fed and raised freely in the montanera system. Minimum curing time is 32 months.
This shoulder is high in monounsaturated fatty acids, especially oleic acid, similar to that found in olive oil, which helps maintain healthy cholesterol levels. It is also a rich source of protein, vitamin B1, iron, zinc, and magnesium, making it a completely natural and nutritious product.

The 50% Iberian Bellota Shoulder from Hermanos Hoyos is crafted from pigs raised in Spain, a cross of Iberian and other select breeds. These pigs enjoy a balanced diet including acorns, which gives the ham its signature flavor and smoothness in every bite. The curing process is meticulous, with a maturation time exceeding two years, achieving a soft texture and just the right fat marbling to enhance its taste.
Each piece is carefully selected and undergoes a curing process that lasts more than three years, allowing for a deep and complex flavor to develop. The meat is lean and tender, with fat marbling that delivers a truly unique taste.

RECOMMENDATIONS:
Cover the sliced area with the shoulder’s own fat or a clean cloth to prevent drying.
Store in a cool, dry place, away from direct light and drafts, at a temperature between 15°C and 25°C.
Cut only what is needed for each use, keeping the rest covered to preserve flavor and texture.
Rotate the shoulder once one side is finished, to ensure even slicing on both sides.

Shipped in a protective, breathable cotton cover to shield it from dust and abrasion.
We use a rigid cardboard box specifically designed to transport shoulders, perfectly adjusted to its size.
