Our 50% Iberian Breed Acorn-fed Shoulder stands out for its delicate marbling of fat, giving it a beautiful marbled appearance and exceptional juiciness, along with a smooth and refined texture. It comes from the finest Iberian pigs raised freely during the montanera season and fed exclusively on acorns. Minimum curing time is 32 months.
This shoulder contains a high level of monounsaturated fatty acids, particularly oleic acid—similar to that found in olive oil—which helps maintain healthy cholesterol levels. It is also rich in protein, vitamin B1, iron, zinc, and magnesium, making it a completely natural and nutritious product.
