The 100% Iberian Acorn-fed Shoulder D.O.P. is a special selection of 100% Iberian pigs fed with acorns and raised free-range in the “montanera”.
The 100% Iberian breed acorn-fed shoulder from Hermanos Hoyos is a true culinary jewel. Sourced from purebred Iberian pigs raised in the Spanish “dehesas”, this shoulder is the result of a centuries-old tradition and a meticulous production process. The pigs feed exclusively on acorns and grass during the montanera, giving the meat its rich flavor and aroma.
Each piece is carefully selected and cured by hand for a period that usually exceeds two years. The result is lean and juicy meat with just the right fat infiltration that gives it an unmatched flavor. The texture is smooth and delicate, with nuances that evoke the essence of the dehesa. This ham represents the excellence of Spanish gastronomy and is a true delicacy for the most demanding palates.

RECOMMENDATIONS:
Cover the cut surface with the shoulder's own fat or a clean cloth to prevent it from drying out.
Store in a cool, dry place, away from direct light and drafts, at a temperature between 15°C and 25°C.
Cut only what you need for each use, keeping the rest covered to preserve flavor and texture.
Rotate the shoulder when one area is finished, ensuring an even cut on both sides.
