Our 75% Iberian Acorn-fed Shoulder D.O.P. stands out for its delicate fat marbling, giving it a marbled appearance and exceptional juiciness, along with a smooth and refined texture. It comes from the finest Iberian pigs, acorn-fed and raised freely in the montanera system.

This shoulder contains a high level of monounsaturated fatty acids, especially oleic acid—similar to that found in olive oil—which helps maintain healthy cholesterol levels. It is also a rich source of protein, vitamin B1, iron, zinc, and magnesium, making it a completely natural and nutritious product.

75% Iberian Acorn-fed Shoulder D.O.P. Special selection of Iberian Bellota from the finest Iberian pigs, acorn-fed and raised freely in the montanera system.

The 75% Iberian Bellota Shoulder from Hermanos Hoyos is a true delight for gastronomy lovers. Produced from pigs with remarkable Iberian purity, these animals are raised in Spanish dehesas and fed mainly on acorns, which gives the ham its unmistakable flavor and exquisite texture.

Each shoulder is carefully selected and undergoes a curing process that lasts over two years, allowing it to develop a deep and complex flavor. The meat is lean and tender, with fat marbling that provides a truly unique taste.

Minimum curing time: 32 months.

RECOMMENDATIONS:

Store in a cool, dry place, away from direct light and drafts, preferably refrigerated.

Enjoy at room temperature: remove the shoulder from storage about 20 minutes before consumption to bring it to ambient temperature. This helps release flavors and aromas and allows the fat to melt ideally.

Slice only what you need for each serving.

Store leftovers: if you’re not consuming the whole piece, wrap it in plastic wrap or a clean cotton cloth and keep it refrigerated.
