It comes from the finest Iberian pigs, acorn-fed and raised freely in the montanera system. Its minimum curing time is 32 months.
This shoulder contains a high level of monounsaturated fatty acids, especially oleic acid—similar to that found in olive oil—which helps maintain healthy cholesterol levels. It is also a rich source of protein, vitamin B1, iron, zinc, and magnesium, making it a completely natural and nutritious product.

The 50% Iberian Acorn-fed Shoulder from Hermanos Hoyos is made from pigs raised in Spain, a crossbreed of Iberian and other select breeds. These pigs enjoy a balanced diet that includes acorns, giving the ham its characteristic flavor and smoothness in every bite. The curing process is meticulous, with a maturation period of over two years, resulting in a tender texture and perfectly balanced fat marbling that enhances its taste.
Each piece is carefully selected and undergoes a curing process that lasts over three years, allowing it to develop a complex and deep flavor. The meat is lean and tender, with fat infiltration that delivers a truly unique taste.

RECOMMENDATIONS:
Store in a cool, dry place, away from direct light and drafts, preferably refrigerated.
Enjoy at room temperature. Remove the shoulder from storage about 20 minutes before consumption so it can reach ambient temperature. This enhances the release of flavors and aromas and allows the fat to melt ideally.
Slice only what you plan to consume.
If not consuming the entire piece, wrap the leftover in cling film or a clean cotton cloth, and refrigerat
