Its natural curing process, lasting between 4 and 5 months, develops a firm texture and intense flavor. The lean meat is mixed with a marinade of paprika from La Vera and garlic, giving it a distinctive taste and vibrant red color. The acorn fat infiltration provides smoothness and a rich mouthfeel.
