Sourced from the finest Iberian pigs raised freely on acorns during the montanera season. Minimum curing time: 32 months.
This shoulder is high in monounsaturated fatty acids, especially oleic acid — similar to that found in olive oil — helping to maintain healthy cholesterol levels. It is also rich in protein, vitamin B1, iron, zinc, and magnesium, making it a completely natural and nutritious product.

The 50% Iberian breed acorn-fed shoulder from Hermanos Hoyos is made from pigs raised in Spain, a cross between Iberian and other select breeds. These pigs enjoy a balanced diet that includes acorns, giving the ham its distinctive flavor and tender bite. The curing process is meticulous, with a maturation period of over two years, resulting in a smooth texture and balanced fat infiltration that enhances its flavor.
Each piece is carefully selected and undergoes a curing process lasting over three years, allowing it to develop a deep and complex flavor. The meat is lean and tender, with fat marbling that provides a truly unique taste.
RECOMMENDATIONS:
Cover the cut area with the ham's own fat or a clean cloth to prevent it from drying out.
Store in a cool, dry place, away from direct light and drafts, at a temperature between 15°C and 25°C.
Slice only what you need for each serving, keeping the rest covered to preserve flavor and texture.
Rotate the shoulder once one area is finished, to ensure even slicing from both sides.
