RECOMMENDATIONS:
Cover the cut surface with the shoulder's own fat or a clean cloth to prevent it from drying out.
Store in a cool, dry place, away from direct light and drafts, at a temperature between 15°C and 25°C.
Slice only what is needed for each serving, keeping the rest covered to preserve flavor and texture.
Turn the shoulder when one area is finished, ensuring even slicing on both sides.
