It comes from the finest Iberian pigs, raised free-range and fed on acorns during the montanera season. Its minimum curing time is 32 months.
This shoulder has a high content of monounsaturated fatty acids, especially oleic acid—similar to that of olive oil—which helps maintain healthy cholesterol levels. It is also rich in protein, vitamin B1, iron, zinc, and magnesium, making it a completely natural and nutritious product.

The 75% Iberian breed acorn-fed shoulder from Hermanos Hoyos is a true delight for gastronomy lovers. Made from pigs of remarkable Iberian racial purity, these animals are raised in Spanish dehesas and primarily fed on acorns, which gives the meat its unmistakable flavor and exquisite texture.
Each shoulder is carefully selected and undergoes a curing process lasting over two years, allowing it to develop a complex and deep flavor. The meat is lean and tender, with a marbling of fat that gives it a truly unique taste.
RECOMMENDATIONS:
Cover the cut surface with the shoulder’s own fat or a clean cloth to prevent it from drying out.
Store in a cool, dry place, away from direct light and drafts, at a temperature between 15°C and 25°C.
Slice only what you need for each serving, keeping the rest covered to preserve flavor and texture.
Rotate the shoulder once one area is finished, ensuring an even cut on both sides.
